It requires a bit of patience, but it's creamy, easy, and above all, very rewarding and surprising.
Place the semolina, flour, baking powder, yeast, sugar, and salt in a bowl and mix well. Put the water and all the dry ingredients into a blender. Blend until smooth, about a minute or more. Let the mixture rise for 15 minutes in a warm place.
Use a non-stick pan. Slowly pour the batter into the middle of the pan, making sure it is evenly distributed. This will create nice round pancakes. Cook them over medium heat (or slightly lower) until the surface is no longer 'wet'.
Important - do not flip the baghrir, it is only cooked on one side :) just watch the beautiful bubbles form on the surface!
Serve it with melted butter, a little agave, and anything else you dream of!
